Is there an advantage to having a square riser, other than making it easy to build from vermiculite board, which can be shipped flat? Does the square tube give better turbulance for mixing the gasses? What effect does the square riser have on the "torus" inside the barrel?

I don't think square risers matter much. As long as you account for surface friction in the corners. In my batch rocket barbecue, the double ram horn happens with a square with rounded corners chimney flue.

The square riser does not flow as well as a round riser of the same CSA (cross sectional area). As long as that is accounted for, it should be fine.
