Which way does fire rotate or spin in a riser?

There isn't one specific direction, clockwise or anti-clockwise. See this video:

Here in Slovenia we have a 360 metres high chimney for burning lignite to produce electricity. (not to be proud of that) When the heavy smoke goes out you can see the double spiralling of fumes... en.m.wikipedia.org/wiki/Trbovlje_Power_Station

Out of curiosity why does the water in the old gurgler spin clockwise in the northern hemisphere and counter clockwise in the southern hemisphere?

It doesn't. It can spin either way.

Actually it does. And it's because of the Coriolis effect. The differential speeds of different latitudes of the earth spin cause air water and other dynamic systems to convect against each other.

Hey I just noticed yesterday, while running my test burner that the fire would rotate mostly one direction, but sometimes it would almost start going the other direction depending which side was burning the strongest. It would seem that you could to spin either direction depending on if you placed your throat off to one side or the other. However there would seem to be one direction that it would prefer to spiral.

At 64 degrees north latitude mine spins clockwise in the combustion chamber when viewed from the feed tube towards the riser. I can get it to not rotate, just run straight, but only for a limited time. I haven't been able to get mine to spin counter clockwise in three test burns since I first read this thread.
I know which way my trip wire is going to slant.
