In action!!! Also have a griddle and a pizza stone that fits inside. Once I feel it is working as I want it to, the temp mounts will be made in stainless also. Pizza was pretty good for a "dirty" oven configuration. Still have stainless trim pieces to build, front panel

Do you use any sort of heat diffuser? I've often wondered if the high heat coming up through the center would be too much in the middle but then not enough away from the center. In short, do you need to do anything special when cooking with it?
Great looking device BTW.

Thanks! Yes, multiples. One is the air vent that came with the grill which runs parallel and inside to the adapter in photo 1 and also runs the full length (really helps distribution). Above that I ran stainless perf > 60% open, then the stainless grill that came with the unit and cast iron (pic 4) on top of that. Cast iron just grills better! The ss griddle and pizza stone would sit on top of that. I think the next pizza will get an aluminum pan on top to isolate from the smoke, simplest solution although it is far too wood hungry in this configuration. I think a stand alone pizza oven attachment is needed

Very nice design! I'll bet that has a very high WAF rating. Does the rocket exhaust exit thru the vents on the sides of the grill? Nothing like a steak on the grill to beat the winter doldrums.

Yes, through the bottom vents and also through a 3/4" x 16" slot at the top. Have yet to modify the grill much yet in terms of venting or air flow, seems to do well now but will be tweaked.
