If you were to get a new (insulated) chimney which one would it be?
Stainless steel has low mass so it performs better while clay one has longer lifespan. Than some people use galvanized zinc/aluminum steel pipes for years without problems. Also in a case of a lightning strike metal carries current better so I guess it needs to be grounded

Another factor is the difficulty in flashing a masonry chimney.
If there's no chimney in place I would opt for the insulated stainless. It is very easy to put in and you can use single wall until you get to the ceiling. In most cases you only need a few feet of it. And the flexible boots are very easy to install on a metal roof.
Never heard of grounding a stove pipe seems like a subject ripe for debate with little to be said but speculation.
