I'm looking at build a system but I'm struggling to find information on what diameter size work best on a system is there a rule of thumb??
my riser tube will be casted at 7" internal diameter and a 10" outer.
The batch box sizes will be copied from the spread sheet but as above im not sure if I should have a bigger chimney of say 8 inches which I will struggle to get the pipes for or go for a 6 inch pipe for the flue stack.

It's simple, really. Your chimney need to be the same size as the riser diameter or slightly larger. Some people got away with smaller flue sizes but you are running the risk of a heater that isn't up to specs. Remember, the csa of an 8" flue is 1.77 times larger as compared to a 6".
