What is the advantage of having the brick on top of the burn tunnel laid on edge rather than flat?
It would seem if laid flat it would heat quicker and more evenly and be less prone to breakage, at least the first one?

The top of the burn tunnel is a very tough place for bricks. It gets the most intense heat and stresses. Plus those bricks are spanning (without support except the ends) and carrying a load. On edge has the advantage of being the best way to adress these issues. This has been proved through experience of Ianto and others. I haven't tried experimenting as I am happy to go with others experience. But maybe you might prove something else? It does take going outside the box to have a good breakthrough.
