I wonder if, since the ideal stack emission is steam, that means that water would collect in the heat ducts leading eventually to rusting of metal pipes?
Or is there enough residual heat after the burn is finished to evaporate any remaining condensate?

Condensate is a real concern. I was surprised by how much liquid came out of my mass bench for many firings. It pooled up in low spots and leaked out of joints. Eventually it ceased to be an issue. My theory is that a layer of ash/creosote builds up after repeated cycles and has enough surface area to allow for re-evaporation as things heat up beyond condensing temps. Anyway, you can read my worried thread called "condensate" ? or something like that only a few months ago.
