Hi All,
Does anyone know of a source for radial dial thermometers with long (8"+) probes that can also handle 400c temperatures? I am only managing to find many compost thermometers with lower temp capacities, and many higher temp thermometers with shorter probes...

You could use a heatpipe to bring the heat within easy reach.
DIY a heatpipe is simple. Take a copper tube and close one end. Fill a small amount of water into the tube. Heat up the tube until steam comes out of the upper end. Close the tube while steam comes out.
If propperly done the temperature of the cold end will be within 2°C of the temperature at the hot end. Heat transfer can be further improved by inserting a copper mesh into the tube.
The heatpipe could be several meters long.
I made some playing in the same league as the highest performing industrial offerings for a small fraction of the price.
Welded tubes can work at pretty high tempratures. Stainless steel tubes could operate at even higher temperature, but the temperature difference would be a bit higher.

Pat, I have to run right now so can't find the exact model number, but Teltru makes an oven thermometer which goes up to 1000F and has an 8" shaft. I use one for my rocket oven, and it's fabulous if a bit pricey. They are hard to find in that configuration online, so my best advice is contact the manufacturer directly. www.teltru.com/
