Yes cob does dry It is not clear what you are capping it with. If it resists water vapor it is best to leave it off until cob is dry . You can speed up the drying by having fires, I seem to remember Donkey or someone else that built lots of J-tubes with ducted cob benches talking of running it full tilt when placing and cobbing in the drum in order to be able to fine tune the drum's distance away from the heat riser.

If you have access to granite stones of various sizes you can pack these in using the cob to fill any air gaps. You will have to mix far less cob and enjoy a bench with a much higher thermal density, resulting in longer radiation cycles between burns.
