Are there ways of controlling the temperature of the cooking plate (apart from putting in less or more wood...0?

If it's too hot I just move the pot, pan or kettle to a cooler area of the cooking plate.

I guess you could have some kind of sliding vane arrangement to divert the heat another way. But given the lag time in heating up the (I assume) top surface of a cast iron cooking plate, getting "the right temperature" would be a real pain I expect. So I tend to agree. Move the pot.

1. add more/less/change type wood 2. open/close the bypass 3. move the pot to different areas 4. use spacers underneath the pot

Ok! I'll just make sure I have some extra (cooler) space to move the pot to. Learn how much I should feed. And I'll think about spacers.
Does anybody have estimates/measurements of how hot (different places of) their cooking plate is/can get?

Just measured it for you. Hottest part was 405*C / 761*F. Coolest was 71*C / 160*F.

I get the same max temp 400c with the vortex i built here. Smaller deck so not as cool 150c further away from throat. Tuning down the primary air on these fire boxes might also bring it down a bit...
