Could I use hollow bricks to increase ISA of the bell? Something like this hollow brick inside a masonry bell, sort of like micro channels?

No, that would not a good idea. When you want to increase the ISA of the bell, just build some free standing columns inside. those could double as support for the top deck as well. Use massive bricks, it's dense monolith mass that you want.
Besides that, a bell is working because of the large open space.

You could also have bricks perpendicular to the bell's wall, and potruding Inside the bell.
Make each second row like, one brick along the wall lengh, one brick perpendicular, one brick parrallel
to the wall, one brick perpendicular etc. Look at pics of a vapotron, to get the idea!

I was thinking of doing something like that but was concerned that all the nooks and crannies would fill with ash eventually, reducing the surface area. Not sure if that is a valid concern or not.

Leave a little door, and a quick blow with compresed air every now and then would take care of that!
